Valentine's Day 2017

Looking back to last year's valentine cake.  Papi surprised us with this delight from Jody Cakes baked according to our allergic needs.  Little Brother had never had a cake like this one before. We had friends over for our Sunday waffle breakfast.  We included some blender apple oat muffins and turkey bacon (Trader Joe's-no garlic) along with the waffles.  Toppings are the best part: whipped coconut cream, market strawberries, citrus and pecans, hemp seeds, gogi berries, walnuts, sprouted flax, coconut and maple syrup.  Their little boy has many of the same food allergies as our little boy.  Both boys can eat tree nuts. It's great to eat together! Morning french-press coffee with homemade almond milk is best shared.

Homemade Almond Milk

mixed in some cinnamon and one date for afternoon playtime beverage
Place 100 grams of Trader Joe's organic, unpasturized Spanish almonds (soaked overnight) and 1 liter of pure water in TM bowl. Blend for 1 minute speed 10. strain the milk through a nut milk bag.  return pulp to TM bowl and blend 30 sec/speed 10 with 1 liter (or less if want cremier milk) of water. strain again.

Monday Morning Picklets

happy monday morning breakfast time. cashew butter and bananas for rest of family. 
Buckwheat and oat flour freshly ground in Thermomix and left to soak overnight in coconut milk with coconut yogurt and pink salt.  When ready to make following morning, I add cinnamon, melted coconut oil and a touch of coconut sugar.  I melt some ghee and spoon the batter into my hot cast iron pan.  Joy! I usually make my own coconut yogurt.  lately we have been mixing it up with some of this almond yogurt

We started the weekend with gorgeous weather.  It felt great to put out a little snack and spend a few hours enjoying the company of my childhood best friend and her mom in our new home.
