Sawdust Cookies

This is a toddler-friendly adaptation of our favorite healthy cookies. The original recipe, with egg, remains a family secret.  This new egg-free version for toddlers should be shared.







what you need:
1 cup whole wheat or spelt flour
2 cups rolled oats
1/2 cup of brown sugar
1 teaspoon baking soda
freshly ground ginger
1 teaspoon cinnamon
1/4 cup butter (made in Thermomix)
equivalent of one egg EnerG egg replacer
enough juice to make batter consistency, wet but holds together to form cookies
optional: mix in raisins, chocolate chips and/or desiccated coconut

what to do:
preheat oven to 350 degrees

mix ingredients in big bowl in order of appearance according to above ingredient list.  I am currently playing around with soaking the oats ahead of time.

spoon out onto silicon mat lined baking tray

slightly flatten each cookie

bake for about 10 minutes or until golden brown

Happy Herbert's Pretzels Are Happy Indeed!

I contacted Happy Herbert's to inquire about sesame in their facilities.  I am happy to share their response with you.  We will be taking a bag with us on our upcoming trip.


"Our Honey Wheat Pretzel Sticks, Organic Pretzel Sticks, Spelt Pretzels, Kamut Pretzels, Oat Bran Mini Pretzels, and Honey Spelt Pretzels are made in facility that is free from sesame.  None of the aforementioned items contain sesame and their is no sesame run through the production equipment that processes these items."
